Prosciutto-Wrapped Curry-Lime Chicken Skewers

These Prosciutto-Wrapped Curry-Lime Chicken Skewers make a great dinner that’s easy to prepare on the grill with BBQ Croc.

  • 3-4 chicken breasts (boneless and skinless)
  • Grated zest and juice of 2 limes
  • 2 cloves of garlic (crushed)
  • Olive oil
  • 2 tsp celery salt
  • 1 tsp white or red pepper
  • 1 tbsp curry powder
  • 1 tsp garlic granules
  • 2 tsp brown sugar
  • 9-12 bamboo skewers
  • 227-300 g prosciutto (thinly sliced)
  • Salad mix (of your choice)
  • Creamy vinaigrette (of your choice (Ranch, Caesar, etc.))
  • Sliced radishes
  1. Cut each breast into three equal strips, then put them in a bowl. Drizzle with lime juice and a little oil, then add garlic. Mix, cover and marinate for 2-24 hours.

  2. Remove the chicken from the refrigerator, set aside. Combine the lime zest, celery salt, pepper, curry powder, garlic granules and brown sugar in a medium bowl. Coat chicken with this rub, then thread onto skewers. Wrap each skewer with two slices of prosciutto, then place on a well-oiled plate. Drizzle with the remaining lime marinade. Set aside.

  3. Preheat barbecue to medium. Once the grill is hot, clean it with a scraper. Grill the chicken skewers 12-15 minutes, turning occasionally, or until cooked through. Cover if necessary.

  4. Remove the skewers from the grill and serve directly on a bed of salad and sliced ​​radishes. Serve immediately barbecue baked potato and creamy vinaigrette.
